NOTES:

* 5 Quart Pot also works but it will be close to spilling over. If you don’t have a big enough pot, use half the ingredients to produce 5 servings instead of 10.

** One 8 inch chef knife can be used for everything but for comfort and flexibility in prepping multiple dishes and garnishes, consider 3-knife set (Amazon)

*** Storage container link is for set of 10 ( 5 x 34oz and 5 x 12oz ). I recommend by 2 of these, total 20 (10 x 34oz and 10 x 12 oz) for maximum convenience and flexibility.

Ingredients

  • 4 Tablespoons of olive oil (or any cooking oil) - Amazon Whole Foods

  • 2 medium red onions (or yellow onions) - Amazon Whole Foods

  • 1 whole garlic bulb - Amazon Whole Foods

  • 4 habanero peppers - Amazon Whole Foods

  • 2 x 15oz cans tomato sauce - Amazon Whole Foods

  • 4 Tablespoons Vegeta all-purpose seasoning - Amazon

  • 4 Cups water

  • 16oz (1 lb) dry red kidney beans (or preferred dry beans) - Amazon Whole Foods

  • 16oz (1 lb) sliced baby bella mushrooms - Amazon Whole Foods

Peel and cut garlic and onions

  1. Add olive oil to pot

  2. Cook on MEDIUM heat for 2-3 mins until oil is hot.

  3. Add diced onions

  4. Cook on MEDIUM heat for 2-3 mins until onions are softned and slightly bown

  5. Add chopped garlic

  6. Cook on MEDIUM heat for 1 min to soften garlic and release fragrance. Do not brown.

  7. Add Diced fire-roasted tomatoes, tomato paste, whole habanero peppers, sesoning, bay leaves, water

  8. Increase to HIGH heat to bring liquid to boil

  1. Add Rice

  2. Cook on MEDIUM LOW heat 30 min until rice is almost done

    • Stir with cooking spoon scrapping the bottom to sense if rice grains are burning and sticking to the pot.

    • If burning, make sure heat is MEDIUM LOW, lower if neccessary, add water, half cup at a time.

    • Also, if liquid evaporates too fast before rice is almost cooked in 30 mins, add water, half cup at a time during cooking

  1. Remove Bay Leaves & Habaneros

  2. Add & Stir Well Frozen Vegetables to mix with rice

  3. Cook on MEDIUM heat 15 min until vegetables are softened and rice is done (as in previous section, stir to check if rice is burning at the bottom, add water if neccessary)

Separate into serving portions in either 34oz or 12oz container. See NOTES in supplies section for links to view or to order containers:

  • 34 oz container: Place each serving into container together with servings of chefless stewed beans/lentils and/or chefless roasted vegetables and/or chefless roasted meats.

  • 12 oz container: Place each serving by itself in smaller 12 oz container for mixing and matching with other chefless meals
